Vegan cinnamon apple cake
A heavenly treat for all cinnamon lovers: this vegan cinnamon apple cake is not only gluten-free, but also a real taste sensation. The main flavor of this delicious dessert comes from special lan gui cinnamon, a fine variety of cinnamon known for its intense and deep spiciness.

INGREDIENTS
For the dough
- 200 g gluten-free flour
- 150 g ground almonds
- 100 g coconut blossom sugar
- 1 tsp baking powder
- 1 tsp lan gui – cinnamon (ground or in a mortar)*
- 1/2 tsp salt
- 150 g apple sauce
- 60 ml melted coconut oil
- 1 tsp vanilla extract
- 120 ml water or plant-based milk
For the filling
- 2 large apples (sliced)
- 2 tbsp coconut blossom sugar
- 1 tsp lan gui – cinnamon (ground or in a mortar)*
- 1 tsp lemon juice
For the topping
- 2 tbsp coconut blossom sugar
- 1 tsp lan gui – cinnamon (ground or in a mortar)*

INSTRUCTIONS
1. Prepare the oven
Preheat the oven to 180°C top/bottom heat (160°C convection). Grease a springform pan (22 cm) or line it with baking paper.
2. Mix the dough
In a large bowl, mix together the gluten-free flour, ground almonds, coconut blossom sugar, baking powder, lan gui, and salt. In a separate bowl, mix together the applesauce, melted coconut oil, vanilla extract, and water. Add the liquid ingredients to the dry ingredients and mix everything together to form a smooth batter.
3. Prepare the filling
Mix the apple slices with coconut blossom sugar, lan gui, and lemon juice.
4. Assemble the cake
Pour the dough into the prepared pan and smooth it out. Spread the apple slices evenly on top and press them lightly into the dough.
5. Bake
Bake the cake in the preheated oven for approx. 40–45 minutes until golden brown. Shortly before the end of the baking time, sprinkle the topping of coconut blossom sugar and lan gui evenly over the cake.
6. Allow to cool
Remove the cake from the oven and allow to cool completely in the tin, then carefully remove.
