Summer Tea with Peach, Mint & Goji

On warm summer days, the body often desires something light, aromatic and easy to enjoy. In TCM, summer is associated with warmth, movement and the Heart. However, too many cold drinks can weaken the Middle. A balanced summer drink should therefore bring a fresh summer feeling without cooling the body too strongly.

This summer tea combines mei gui hua (Chinese rose flower) with gou qi zi (goji berries), juicy peach and fresh mint. The rose flower gives the infusion a delicate floral note, while the goji berries add a gentle sweetness. The mint brings a pleasant freshness, while peach and goji softly round off the flavour. The result is a light, aromatic and gently balancing summer tea for warm days.

INGREDIENTS

  • 500 ml hot water
  • 1 ripe peach
  • 1 tbsp mei gui hua*
  • 1 tbsp gou qi zi*
  • 2-3 sprigs of mint
  • 1-2 tsp honey or maple syrup, optional
  • A small splash of lemon juice

INSTRUCTIONS

Place mei gui hua and gou qi zi in a teapot or heat-resistant carafe. Pour over 500 ml of hot water, around 80-90 °C, and let the infusion steep for 5-10 minutes.

Strain out the rose flowers if desired. The goji berries can remain in the drink to add extra flavour and texture. Let the tea cool to room temperature, then place it briefly in the refrigerator until lightly chilled.

Cut the peach into thin slices and place them in a carafe together with the fresh mint. Add the cooled tea and sweeten to taste with a little honey or maple syrup and a small splash of lemon juice. Stir gently and serve cool, but not ice-cold. Garnish with extra mint, peach slices and a few goji berries.
