Spring tea
A wonderful delicacy which, in addition to being delicious, also serves to prevent the yang quality of the element wood from flaring up too much in spring. This classic spring tea has enjoyed great popularity in China for hundreds of years. Traditionally, Longjing tea (Dragon Well tea, a green tea from the village of Longjing) is used as the base. However, any tasty green tea that is brewed with ju hua (chrysanthemum flowers) can be used. It should be noted that green tea is generally cooling - if it is roasted, like Longjing, it has a slightly less cooling effect.

INGREDIENTS
- 2 TL lü cha Green tea (Longgjing if possible
- 1 EL ju hua Chrysanthemum flowers
INSTRUCTIONS
First wash the chrysanthemum flowers with boiling water. Then brew the flowers and wait 2-3 minutes until the water is slightly less hot. Then sprinkle over the longjing leaves and leave to infuse briefly.
