Herb and spelt bowl
In TCM, spring represents new beginnings and movement. However, in order for qi to flow freely, a stable center is required. This herb and spelt bowl combines fortifying grains with fresh, green ingredients and selected TCM foods that gently nourish qi and blood without weighing you down. Fresh herbs and radishes bring lightness and movement to the dish which is ideal for the transition from winter to spring.

INGREDIENTS
- 120 g spelt (whole or as grain)
- 1 handful baby spinach
- 1 bunch radishes
- 2 da zao*, cored and finely sliced
- 1 tbsp gou qi zi*
- 1 tsp hei zhi ma*, lightly toasted
- 1 handful fresh herbs (e.g., parsley, chives, optional: some cilantro)
- 1 tbsp sesame paste or olive oil
- 1 tsp lemon juice

INSTRUCTIONS
Cook the spelt in lightly salted water until soft (approx. 25–30 minutes), then drain and leave to steam dry briefly. Meanwhile, soak the goji berries in warm water to soften them. Finely slice the radishes and roughly chop the herbs.
Place the warm spelt in a bowl and fold in the finely chopped da zao. Carefully mix in the spinach, radishes, herbs, and drained goji berries. For the dressing, stir the sesame paste or olive oil with lemon juice, a little warm water, and a pinch of salt until smooth, then pour over the bowl. Finally, sprinkle with roasted black sesame seeds and serve lukewarm.
