Fruit salad for summer heat

INGREDIENTS
- 300 g xi gua/xi gua pi watermelon with rind
- 2 passion fruit
- 1 xiang yuan lemon
- 6 bo he peppermint leaves 1*

INSTRUCTIONS
Dice the watermelon without the rind and place in a wide bowl. Squeeze a lemon into a small bowl and mix with the juice and seeds of the passion fruit, then finely chop a small piece of watermelon rind and peppermint and mix in, leave to infuse for 15 minutes and then spread over the melon pieces.
