Asparagus salad with sesame & goji berries
In TCM, spring is the season of new beginnings and movement. After the heavier winter dishes, it's time to return to fresher, lighter cuisine, without cooling down the body. Lukewarm dishes are particularly suitable during this transition period, as they aid digestion and gently stimulate the flow of qi.

INGREDIENTS
- 500 g green asparagus
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 1 tsp rice vinegar or a little lemon juice
- 1 tbsp gou qi zi*
- 1 tsp hei zhi ma*, lightly roasted
- Salt to taste
- Optional: spring onions or fresh herbs

INSTRUCTIONS
Peel the lower third of the asparagus and cut into bite-sized pieces. Blanch in boiling salted water for 3–4 minutes or sauté briefly in a pan until cooked but still al dente. Drain well and place in a bowl while still lukewarm.
Soak the goji berries briefly in warm water and drain. Mix the olive oil, sesame oil, rice vinegar, and salt and pour over the asparagus. Fold in the goji berries and gently toss the salad. Finally, sprinkle with black sesame seeds and, if desired, finely chopped spring onions or fresh herbs, and serve lukewarm.
